Shami Kabab to suit your palate

Bhopal, May 19: This week Bhopal Today Team has brought for you the recipe of preparing yummy Shami Kababs. The recipe has been prepared by Rajendra Patel, chef of Hotel Arch Manor in MP Nagar after years of experience.

Ingredients: 500 gm mutton (minced); 200 gm clean gram pulses; 2 small teaspoon red chilly powder; 1 small teaspoon salt; one piece of ginger (I inch long);10-12 pods of garlic; 4-5 green chilis; 2 tablespoon coriander leaves (cut into small pieces); 5-6 cloves; 2 bulbs of onion; ghee or oil for frying.

Preparation: Remove the upper skin of onions; ginger and garlic and cut them into small pieces. Mix these with minced meat, chana daal, salt, red chilly powder, jeera and loung. Add little water and put on the stove. When cooked and the water evaporates, remove from the stove and put it in a mixie and make a paste of it without much water. Cut the green chillies into small pieces and mix it along with the coriander leaves with the paste. Take a small ball of paste ion your palm and shape it like cutlet. Deep fry in ghee or oil. Your tasty kabab is ready to serve hot.

Owner of the restaurant, Amit Sujwani said that the restaurant is pure vegetarian and the food here is prepared by special cook. Because of its quality and taste, people here like to come here again and again for a sumptuous food. Here every type of vegetarian dishes are available. He said Dal Fry, Dal Tadka, Dal Butter Fry, Mava Mattar, Dum Aloo, Tomato Masala, Paneer Korma, Kadhai Paneer, Butter Paneer Masala, Paneer Bhrooji, Shahi Paneer are some of the special dishes served here. He said quality and taste of the dishes would be maintained at any cost to keep the tradition of the restaurant.
